Celebrate Cinco de Mayo with Nick’s Taco Soup!

Cinco de Mayo is an occasion to celebrate Mexican food and culture! So if you’re craving tacos and margaritas, May 5th is a perfect day to indulge.

TSC host, Nick Vescio recently had some fun in the kitchen making a healthy Taco Soup. The five easy step recipe is perfect to celebrate Cinco de Mayo.

Ingredients:

  • 2 cups water
  • 1 boullion cube
  • half a clove garlic
  • carrot
  • tomato
  • onion
  • celery
  • taco seasoning
  • taco chips

5 Easy Steps to Make a Healthy Taco Soup

Step 1: Add your soup stock or boullion cube with 2 cups of water. And garlic, but remember don’t use to much! As Nick jokes, it will go from anti-fungal to anti-social!

Step 2: Add your vegetables to your Vitamix blender. Because this is a uncooked soup, Nick recommends using vegetables that are edible raw. And don’t use to much – this is a single serving recipe, but you can easily double it if you’re making it for a friend!

Step 3: Add your taco seasoning!

Step 4: Add taco chips as a thickening agent. Set your Vitamix to the soup setting and let it run for 5 minutes.

Step 5: If you want a chunky soup, add some more veggies and taco chips and turn your Vitamix on on a low setting. If you want a perfectly pureed soup, don’t add anything extra!
